1 pkg. active dry yeast 1 1/2 c. water
3 t salt
3 T sugar
6 cups flour
1 T sugar
Dissolve yeast in water, which should be at room temperature. Add salt, the 3T
sugar, stir to dissolve. Add flour. Knead dough on lightly floured board 10
min. Let rise in greased bowl 15 min.
Punch flat and form square of dough 1 in. thick. Cut into 12 equal strips.
Roll each strip between fingers until 1/2 inch in diameter. Join ends to form
into doughnut shape. (Overlap ends and squeeeze together.) Cover all with
towel and let rise 20 min.
Place 1 gallon water in a deep pot, add 1T sugar, bring to boil. Add bagels
one at a time. Cook several at once. They will sink, then come to the top.
Simmer each one 7 min. Remove, then place on towel to cool.
Bake on ungreased baking sheet 375o F degrees for 30-35 minutes.
Makes 12 bagels.
