Norma's Three Onion Soup
1 large yellow onion ¼ c. butter or olive oil ½ tsp. ground cumin
1 medium red onion 1 Tbsp olive oil ½ tsp. dried thyme
4 shallots 2 14 ½ oz. cans chicken broth 1 tsp. oregano
3 Tbsp dry white wine or Madeira 8 oz. yogurt
Coarsely chop onions and shallots. Cook in butter and oil until clear. Add broth, boil, then reduce heat and simmer 20 minutes. Stir in wine or Madeira and simmer 20 minutes. Blend until smooth. Stir in yogurt and cook until heated.
