Bran Muffins

Pour: 1 cup boiling water

over 3 cups bran cereal (or muesli)

Add: 1 c sugar

1/2 c oil

2 1/2 c flour

2 1/2 t soda

2 eggs

2 c buttermilk (or a 500 ml carton)

raisins and chopped nuts (optional)

Mix together. Refrigerate overnight. (If you have no time for this, you may

bake them immediately.) Fill muffin tins 3/4 full and bake at 400o Fahrenheit

(200o Centigrade) for 15-20 minutes. Makes 24 muffins.

If you do not have a muffin pan, use a rectangular pan about 3-4 cm deep.

Bake and then cut into squares.
