Corn Soup (I have no idea how much
this makes.)
12 ears of corn
w/husks
4 c heavy cream
1/2 t salt
1/4 t ground
black pepper
Preheat grill
or boiler. boil corn in husks 6 in from heat, turning occasionally (20 min)
until husks are charred and kernels are dark brown in spots. Remove husks. Hold
ears upright and remove kernels c/sharp knife. Place kernels in med. sauce pan
& place enough water to almost cover kernels. Boil. Lower heat & simmer
for ~20 min. Strain corn kernels. DIscard the water. Puree corn in blender/food
processor. Using rubber spatula, force through sieve back into the pan. After
discard solids add and simmer for 10 minutes over low heat or to desired
thickness. Add salt & pepper.
